In letzter Zeit komme ich überhaupt nicht vorbei an Oliven – grüne oder schwarze ganz egal. Da kommt mir dieser orientalisch angehauchter Salat gerade recht. Die super klein geschnittenen und frischen Zutaten mag ich total. Ich würde ja sagen “perfekt, gerade jetzt im Sommer” aber von dem merkt man hier in Deutschland gerade nicht all zu viel. Regen über Regen sag ich nur.

Aber egal, dann machen wir uns halt unseren eigenen Sommer in der Schüssel ;)

Orientalischer Salat

Das ist eine Portion, wenn du dich rohköstlich ernährst oder für 4-6 Personen als Beilage.

Was du benötigst

  • 2 große handvoll Rucola
  • 1/2 Zucchini
  • 2-3 große Tomaten
  • 1/2 Gurke
  • 1 gelber oder roten Paprika
  • 1 kleine rote Zwiebel
  • 1 Tasse Oliven
  • 4 EL Balsamico
  • Saft einer 1/2 Zitrone
  • 1/4 Tasse Sesam

Was du tun musst

  1. Schneide den Rucola ganz klein und lege ihn in eine große Salatschüssel.
  2. Wasche die Zucchini, Gurke, Tomate sowie den Paprika und schäle die Zwiebel und dann schneide alles in ganz kleine Würfel. Pack das mit auf den Rucola.
  3. Nimm eine 1/2 Tasse der Oliven, schneide sie klein und platziere sie mit dem Rest der ganzen Oliven auf dem Salat.
  4. Träufel den Zitronensaft und den Balsamico auf den Salat.
  5. Verrühre den Salat, streue den Sesam darüber und serviere ihn.

Tipp: Für eine Rohkostvariante, verzichte einfach auf die Oliven und den Balsamico und nimm anstatt den Saft einer ganzen Zitrone plus eine zerdrückte Avocado.

Lately I can’t get passed olives – green or black doesn’t matter. So that’s why I love this salad. Those very finely cut, fresh ingredients are amazing. I almost want to say “perfect for summer time”, but there is no such thing a summer here in Germany right now. Rain and more rain.

Well… let’s just make summer in our bowls than ;)

Middle Eastern Salad

This is one serving if you eat raw vegan or for 4-6 people as a side salad.

What you’ll need

  • 2 large handful of washed arugula
  • 1/2 zucchini
  • 2-3 large tomatos
  • 1/2 cucumber
  • 1 yellow or red bell pepper
  • 1 small red onion
  • 1 cup olives
  • 4 Tbsp. balsamic vinaigrette
  • juice of 1/2 a lemon
  • 1/4 cup sesame seeds

What you wanna do

  1. Chop up the arugula very thinly and place in serving bowl.
  2. Wash zucchini, cucumber, tomatos and bell pepper and peel the onion. Dice those things up very finely and place on top of arugula.
  3. Take 1/2 cup of the olives and chop ’em up into little pieces than place them in the bowl along with the other 1/2 cup of whole olives.
  4. On top of the salad drizzle the lemon juice and balsamic vinaigrette.
  5. Toss and sprinkle the sesame seeds on the salad and serve.

Tipp: For a raw version of this salad. Leave out the olives and vinaigrette and instead use a whole lemon and mash up some avocado.
