Beetroot Noodle Salad

Und hier wieder ein ganz einfaches Rezept für deinen Start ins Wochenende :)

Ich weiß ja nicht wie du zu roter Beete stehst, aber ich liiiebe sie. Am liebsten frisch, aber auch zu den eingelegten kleinen Bällchen sag ich nicht nein. Aber rote Beete mit Rucola und Pasta, das ist eine ganz andere Liga.

Rote Beete Nudel Salat

für eine große Portion

Was du benötigst

  • 200 g glutenfreie Nudeln deiner Wahl
  • 1 große Knolle rote Beete
  • 2 handvoll Rucola
  • 1 handvoll Cherrytomaten
  • etwas Oregano
  • optional: 1 Esslöffel “Rote Beete Meeretich” Streich (ich liebe den von Zwergenwiese)

Was du tun musst

  1. Koche die Nudeln wie auf der Packung angegeben.
  2. Wasche Rucola und Tomaten und schäle die rote Beete.
  3. Reibe die rote Beete ganz fein.
  4. Halbiere die Tomaten.
  5. Vermische alle Zutaten gut in einer Schüssel und füge noch den optionalen Streich hinzu.

I don’t know what you think about beetroot, but I just looove it. Preferably fresh but I wouldn’t say no to those little canned ball versions either. Combined with arugula and pasta, that takes it to a whole new level.

One big serving

What you’ll need

  • 200 g/ 2 cups gluten free pasta of your choice
  • 1 big beetroot
  • 2 handful arugula 
  • 1 handful cherry tomatos
  • some oregano
  • optional: 1 tablespoon beetroot horseradish (I love the one from Zwergenwiese)

What you wann do

  1. Cook the pasta according to the packaging.
  2. Wash the arugula and tomatos and peel the beetroot.
  3. Grate the beetroot finely. 
  4. Cut the tomatos in half. 
  5. Mix all ingredients in a bowl and add the optinal beetroot horseradish.

Früher zu Schulzeiten, bin ich am Nachmittag heim gekommen und habe mich mit einer großen Schüssel voller zuckriger Kellogs und Kuhmilch vor den Fernseher gesetzt. Und ich rede hier nicht von nur einer Schüssel. Ich habe die ganze Packung knuspriger Teufel neben mir stehen gehabt und immer wieder nach geschüttet, dabei habe ich nicht wirklich mitbekommen was ich mache, weil meine Augen an den TV geklebt waren. Daher wohl mein Übergewicht damals. Sarkasmus.

Jetzt wo ich so viel reifer bin … nicht wirklich ;P Aber zumindest viel gesünder, mag ich immer noch mein Müsli von Zeit zu Zeit am Nachmittag. Selbstgemacht und ohne raffiniertem Zucker sind da heute meine erste Wahl. Auch die Kuhmilch habe ich gegen gesündere Pflanzenmilchalternativen getauscht.

Das Müsli nehme ich auch – natürlich in einem schicken Glas – mit auf Arbeit um dort der Schokoladenfalle zu entgehen :)

5 Zutaten Müsli

Was du benötigst

  • 4 Tassen Haferflocken (glutenfrei wenn du magst)
  • 2 Tassen getrocknete, geraspelte, ungesüsste Kokosnuss
  • 2 Tassen Nüsse oder Samen (je einfacher desto besser, ich habe 1 1/2 Tassen Sonnenblumenkerne und 1/2 Tasse Leinsam verwendet)
  • 1 Tasse geschmolzenes Kokosöl
  • 1/2 Tasse Ahornsirup oder andere Süße die du magst wie Reis- oder Zuckerrübensirup, Honig oder Agavendicksaft

Was du tun musst

  1. Verrühre alle trockenen Zutaten in einer großen Schüssel. Das funktioniert am besten mit einer Gabel oder einem Holzlöffel.
  2. Verrühre das Kokosöl mit dem Ahornsirup. Hierzu verwende ich auch am liebsten eine Gabel.
  3. Jetzt gießt du das Kokosöl-Ahornsirup-Gemisch über die trockenen Zutaten und vermischst alles gut mit einer Gabel, bis es zu einer klebrigen, krümligen Masse wird.
  4. Verteile das ganze auf einem mit Backpapier ausgelegtem Backblech und schiebe es in den Ofen bei 180°C/356°F (kein Vorheizen nötig). Du wirst feststellen, dass die Seiten viel schneller braun (also getoastet) werden als der mittlere Teil. Deswegen nimm ca. aller 10 Minuten einen Holzlöffel und rühre das Müsli einmal um, damit alles gleichmäßig goldbraun wird.
  5. Nach ca. 20 Minuten kannst du das Müsli aus dem Ofen nehmen. Lass es noch eine halbe Stunde abkühlen, bevor du es in einem luftdichten Container packst.

 

Tipp: Du kannst natürlich auch ganz verrückt werden und ein paar Gewürze (wie Zimt und Piment) oder Kakao beimischen ;-)

Back in school, I used to come home after class and sit down in front of the tv with a bowl full of sugary cereals and cows milk. And I’m not talking only one bowl. I took the whole bag of crunchy devils with me and just poured in more and more, not really noticing what I was doing because my eyes where glued to the tv. Hence my overweight back than. Duh!

Now that I’m more mature … not ;P But way more healthier I still like my muesli from time to time in the afternoon. Homemade and refined sugar free is my choice these days and of course I switched cows milk for a plantbased alternative. 

I also take this muesli sealed in a fancy glas jar – of course – with me to work. That keeps me from craving the chocolate in the afternoons :)

5 Ingredient Muesli

What you’ll need

  • 4 cups rolled oats (gluten free if you will)
  • 2 cups dried, shredded, unsweetend coconut
  • 2 cups of nuts or seeds (the simpeler the better, I used 1 1/2 cups sunflower seeds and 1/2 cup flax seeds)
  • 1 cup coconut oil (melted not hard)
  • 1/2 cup of mapel syrup or other sweetener of your choice like rice syrup, sugar beet molasses, honey, agave syrup

What you wanna do

  1. Blend together all dry ingredients in a big bowl. Works best with a fork or wooden spoon.
  2. Blend together the coconut oil and mapel syrup in a separate bowl. Love using a fork for this as well.
  3. Now pour the wet ingredients over the dry ones and blend with a fork very well. It should get a sticky crumbly texture.
  4. Toss the muesli on a lined backing tray and stick in the oven whith the heat turned up to 

    180°C/356°F (no pre-heating neccessary). You will notice that the sides will get toasted faster than the middle part, that’s why take a wooden spoon every 10 minutes and turn the muesli over, so that it’s get nice and crispy evenly. 

  5. After 20 minutes the muesli is ready to be taken out of the oven. Let it sit for about half and hour to cool down, than place it into an airtight container.

Tipp: You can go crazy if you like and add a couple spices (like cinnamon or all spice) or cacao to your muesli … have fun ;-)

Rhubarb Cookies (Gluten free, Sugar free, vegan)

Rhabarber im Keks habe ich bisher auch noch nicht gehabt. Als ich aber den riesen Rhabarber bei meinen Eltern im Garten gesehen habe, hab ich sofort an Kekse gedacht. Vorallem wollte ich was Unkompliziertes und Schnelles. Den Rhabarber in einer Küchenmaschine zu mixen schien mir dann am logischsten ;-)
Et voilà, ziemlich lecker.
Aber ganz wichtig: NIMALS die Süße vergessen, sonst schmeckts wie saure Pappe… Glaubt mir, das ist mir schon so ergangen. Nicht wirklich schön.

Rhubarb in cookies, never had that before. But when I saw the huge stalks in my parents backyard, I immediately thought of cookies. Most of all I wanted something uncomplicated and fast. Liquifing the rhubarb in the blender seemed the most reasonable to me ;-)
Et voilà, pretty tastey.
But keep in mind: NEVER forget to sweeten them or else you’ll end up with sour cardboard. Trust me I’ve been there. Not very pretty.

Recipe (makes about 12 cookies)

What you’ll need
1 small stalk rhubarb
1 1/2 cup gluten free oats
1/4 cup mapel syrup
1/4 cup sunflower seed oil
1 tsp cinnamon
1/4 tsp baking powder

What you wanna do
Wash and peel the rhubarb stalk, then cut in chunks
Place those chunks of rhubarb, the oil and the syrup in a blender until it’s liquified
Mix the liquid with the oats, cinnamon and baking powder
Spoon the mixture onto a lined cookie sheet and bake for 20 minutes on 180°C/356°F
Let the cool and set before you serve ’em

Tip: Spread some marmelade on top ;-)
