Raw Pasta + Sauce

image007-1 image001 image002-1 image003-1 image004-1 image005-1 image006-1

I’ve seen these everywhere. Zoodles. Zucchini sliced as pasta with a variation of different sauces. I didn’t want to buy a big spiralizer but my ususal vegetable slicer did just the same job.

This pasta is so easy that I made it for lunch and dinner. Without any regrets because they’re just raw vegetables. I’d never thought this could be so yummy.

What you’ll need (yields one person)

– 1 small zucchini
– 1 bellpepper
– 6-8 cherry tomatos
– 1/2 tsp. dried garlic
– 1/4 tsp. Salt
– 1 tsp. Thyme or oregano
– 10 almonds

What you wanna do

– Spiralize the zucchini and put in bowl
– Blend in blender: bellpepper, tomatos, garlic, salt, herbs
– Add sauce on top of zoodles
– With a sharp knive roughly chop the almonds and sprinkle on top of sauce

image009-1 image001 image002 image003-1 image004 image005-1 image006 image007 image008-1 image010-1

Perfekt eben ;-)

At work I could eat the whole day. Why? I don’t know :-)! We get fruites for free – that’s awesome – but sometimes I like some dark chocolate as well. For a change I made myself some date protein bars on Monday. Super gooey and super sweet. Perfect ;-)

The recipe (yields 6 large bars)

What you’ll need
– 250 g dates
– 1 Cup Water
– 1 Cup Chia Seeds
– 1 Cup Almond Meal

What you wanna do
– Put the dates and the water in a blender and blend away until a thick pastes forms.
– Mix the date paste with the chia seeds and the almond meal.

– Put it in the fridge for a couple of hourse to thicken.
– Cut in bars.
