Am Mittwoch ist mein Geburtstag und ich wollte unbedingt einen rohen Geburtstagskuchen. Natürlich mit ordentlich Schokolade ;-) Mir schwebte schon seit langem ein Kuchen vor, den ich vor einigen Jahren schon einmal gemacht hatte. Der war allerdings mit Keksen (ihr wisst welche ich meine, die kleinen braunen, runden mit der Milchcremefüllung ;-), einer ordentlichen Portion Zucker und ganz viel Sahne. Er war zwar super lecker, aber nicht ganz gesund. Deswegen wollte ich eine gesunde, rohe Variante kreieren.
Kurzerhand habe ich einfach ein paar meiner alten Rezepte kombiniert und das ist dann dabei heraus gekommen. Am liebsten hätte ich Himbeeren oben drauf gemacht, aber es waren nur Erdbeeren im Haus. Aber die passen auch absolut perfekt.
Experiment ungesunden Kuchen in gesunden umwandeln erfolgreich gelungen.

As my birthday is this Wednesday, I really wanted to make myself a raw vegan cake. Of course with a huge amount of chocolate ;-) For quite some time I had this recipe in mind. A couple of years ago I made this cake with a huge batch of cookies (you know which ones I’m talking about, the little, brown and round ones with the white creme filling ;-), a lot of sugar and cream. It was incredibly good, but also absolutly unhealthy. That’s why I wanted to create a healthier version.
I just combined some of my older recipes and this pie came alive. I would’ve loved raspberries on top, but these strawberries are just fine… ok perfect.
The mission has been successfully accomplished.

What you’ll need for the crust

  • 2 cups of nuts (Almonds, Walnuts) – use the ones you prefer or even a nut mix as I did
  • 1 cup of dried figs
  • 1 cup of dried dates
  • 1 tsp cinnamon
  • 1/4 tsp pimento/allspice

What you’ll need for the chocolate topping

  • 2 cups of dates
  • 1/4 cup coconut oil
  • 2 Tbsp cacao/cacao nibs
  • Fresh fruites for decoration – I suggest strawberries or raspberries

What you wanna do

  1. Throw all the crust ingredients in a blender and blend until you reach the texture of fine crumbs
  2. Press the crust mixture into a pie pan
  3. Place all the topping ingredients (except the fresh fruites) in the blender and blend until paste forms
  4. Pour the topping on top of the crust and spread evenly
  5. Place pie in the fridge for at least an hour
  6. After the pie is nice and cooled place  it on a platter, decorate with the fresh fruits and voíla you’re done

Jetzt einen dieser Kuchen genießen…oh man…das wäre wunderbar. Aber mal ehrlich, wer -wenn er bei klarem Verstand ist- würde nicht das erste Rezept probieren. “Eine-Rührschüssel-Kuchen” weniger Abwasch! Hallo! Win-win Situation genau hier.

Indulging in one of these cakes…oh my…that would be amazing right now. But seriously the first one. I mean, who -in their right mind- wouldn’t want to try that recipe. One bowl makes less dishes to wash. Duh! Win-win situtation right there.
