Hast du schonmal rohen Kürbis gegessen? Wahrscheinlich eher nicht, oder? Meist isst man ihn ja als Suppe oder Kuchen. Deswegen möchte ich euch heute mal ein Rohkost Rezept mit Kürbis vorstellen.

Wusstest du das der Kürbis zwar ganz wenige Kalorien hat (26 Kalorien pro 100g) dafür aber super reich an Antioxidantien wie Vitamin A, Vitamin C und Vitamin E ist? Außerdem unterstützt das Betacarotin im Kürbis unsere Sehfähigkeit und schützt uns vor UV Strahlen.

Have you ever eaten raw pumpkin? Probably not, right? We usually eat it in soups and pies. That’s why I’d love to introduce to you a raw vegan recipe with pumpkin today.

Btw – Did you know that pumpkin is super low in calories (26 calories per 100g) but very rich in anti-oxidant vitamins such as vitamin-A, vitamin-C and vitamin-E? Moreover the beta-carotene supports our eye sight and protects our skin from UV rays.

So go out and get one of these huge orange things ;)

Recipe (yields 4 servings)

What you’ll need

  • 4 cucumbers
  • 2 handfull cherry tomatoes
  • 3 cups raw Hokkaido pumpkin or 1/2 a small Hokkaido pumpkin
  • 2 cups water
  • 1 cup sunflowerseeds
  • 1/2 red onion (peeled and chopped)
  • 1 garlic clove (peeled and chopped)
  • 1/2 teaspoon tumeric/curcuma
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red paprika
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt

What you wanna do

  1. Spiralize (with a spiralizer) your cucumbers into noodles and set aside.
  2. In your blender add the water and the sunflowerseeds and blend away for a couple of minutes until frothy.
  3. To the seed-water-mix add all other ingredients and blend very well.
  4. On each plate start with laying out the cucumber noodles, spread the pumpkin pesto over it and sprinkle cherry tomato halfs on top.

Tipp:

1- To get the pumpkin meat out of the pumpkin use a melon baller. This gets the meat out pretty easy.

2- You can check the ripness of the pumpkin just as you’d check your melons. Knock on the uncut pumpkin with your knuckles. If it sounds hollow it’s ripe.
