Was macht man denn eigentlich mit Chinakohl – oder auch Baak Choi, Japankohl oder Pekingkohl – wenn man ihn nicht kochen möchte? Ja, das habe ich mich auch gefragt. Vor einer ganzen Weile hatte meine Mama ihn als Salat zubereitet, ok das hatte ich mir gemerkt…und nun welches Dressing? Eine Kollegin hatte erst letztens einen Kohlsalat mit einem super Dressing mitgebracht, dass habe ich einfach nachgemacht und es passt super. Die Süße des Apfelessigs und die frische des Salates passen super zusammen. Man könnte theoretisch noch Früchte wie Mangos, Äpfel oder Nektarinen unterheben, aber ohne ist er auch köstlich.

Da ich soviel hatte, das ich drei Abende davon essen konnte, gabs immer etwas anderes dazu, mein Favorit waren Kartoffeln ;-)

Obwohl der Chinakohl so ganz ohne Farbe ist hat er viele gute Inhaltsstoffe. Er ist vorallem voll mit Vitamin C (45 mg auf 100 g Salat). Außerdem stecken in ihm viele andere Nährstoffe, wie das Vitamin D und andere Mineralien wie Eisen, Magnesium und Calcium.

What on earth could you do with chinese cabbage – also known as Pak Choi, Japanese cabbage or Beijing cabbage – other than cooking it? Yeah, that’s what I thought about also. A while ago my mom made a salad out of it, ok that’s what I remember…but which dressing to make for it? Some days ago a colleague brought a kale salad to work with an amazing dressing, that’s what I recreated and it really complements the chinese cabbage.The sweet and tangy taste of the apple cider vinegar and the crispy salad really work together. Theoretically you could add fruites like mangos, apples or peaches but if you leave it plain it’s just fine.
As I made such a huge amount that it lasted me 3 nights, I had it three diferent ways. My favorite was with potatoes ;-)
You wouldn’t think chinese cabbage has a lot of healthy ingredients, because it has almost no color, but it’s super rich in Vitamin C (456 mg per 100 g/3.5 oz Salad). Other than that it has even more awesome nutrients, like Vitamine D and other minerals like iron, calium and magnesium.

Recipe (yields a large bowl)

What you’ll need

  • 1 small/medium sized chinese cabbage
  • 1 small red onion
  • 1/4 cup apple cidar vinegar
  • 1/2 tsp. black pepper
  • 1 Tbsp. dried cilantro (if you have use fresh one)
  • 1 Tbsp. dried Dill (if you have use fresh one)

What you wanna do

  1. Chop up the cabbage and place in a large serving bowl
  2. In your blender, blend all other ingredients very well
  3. Pour the dressing over the cabbage
  4. Let sit in fridge for at least an hour before serving

Tipp: Add some nuts/seeds on top like sunflower seeds, You could also add sun dreid tomatos for extra flavor
