Jetzt mal ehrlich, dass was Burger essen so spannend macht sind doch die schmutzigen Hände danach. Wenn alles voller Soße ist und auch noch etwas davon an Kinn und Nase klebt, dann war es ein super Burger.

Das Wichtige beim Tomaten Burger ist, das man beim zuschneiden der Gemüse variieren sollte. Möhren einfach so in Scheiben schneiden ist nicht…niemand will sich an einer harten Möhre einen Zahn ausbeißen, deswegen lieber Möhren, Gurken und Zucchini mit einem Spiralschneider oder einen speziellen Schäler in feine Nudeln raspalen. Das gibt dem Ganzen nochmal eine ganz andere Konsistenz.

Für den Crunch-Faktor einfach ein paar Sonnenblumenkerne mit drauf streuen. Außerdem wirken sie im Körper als Entzündungshemmer und sind ein gesundes Fett durch ihren hohen Vitamin E Anteil, gut für den richtigen Schimmer deiner Haut ;)

Now, let’s be real what makes burgers that excited is how messy your hands are afterwards. When the sauce gets everywhere, even on your chin and nose, that’s when you know you’ve had an awesome burger.

The most important with the tomato burger is how you cut up your veggies… no one wants to lose a tooth on hard carrots. Rather cut them carrots, cucumbers and zucchinis with a spiralizer or special vegetable peeler into fine noodles. That’s what gives it a really nice consitency.

For the crunch factor, just add a few sunflower seeds. Moreover they act as an anti-inflammatory in your body and the high vitamine E in that healthy fat gets your skin glowing.

Recipe (for two tomato burger)

What you’ll need

  • 2 really large tomatoes
  • 1/2 cucumber
  • 1/2 zucchini
  • 2 medium mushrooms
  • 2 smaller carrots
  • 1 avocado
  • 1 handful spinach
  • 1 Tabelspoons sunflower seeds

What you wanna do

  1. Wash you veggies – except for the mushrooms, you just need to scrape the dirt off them
  2. Cut the tomatoes in half an scrape out the seeds and with them the liquid (you can use that in a smoothie or just make some tomato juice) – set aside on a nice plate
  3. Now spiralize your zucchini, carrots and cucumber and place them right next to your tomatoes
  4. Cut your avocado in half, take out the pit, scrape out the inside and in a bowl mush that with a fork really nicely together and put back into the avocado shell
  5. Lastly slice the mushrooms really finely and place on plate next to your other veggies
  6. The last thing you need to do is just to put everything on your burger you’d like and have fun

Tip!
You can basically use any veggies you’d like for that recipe. I’ve tried and tested spring onions and there perfect for this as well.

Was macht man denn eigentlich mit Chinakohl – oder auch Baak Choi, Japankohl oder Pekingkohl – wenn man ihn nicht kochen möchte? Ja, das habe ich mich auch gefragt. Vor einer ganzen Weile hatte meine Mama ihn als Salat zubereitet, ok das hatte ich mir gemerkt…und nun welches Dressing? Eine Kollegin hatte erst letztens einen Kohlsalat mit einem super Dressing mitgebracht, dass habe ich einfach nachgemacht und es passt super. Die Süße des Apfelessigs und die frische des Salates passen super zusammen. Man könnte theoretisch noch Früchte wie Mangos, Äpfel oder Nektarinen unterheben, aber ohne ist er auch köstlich.

Da ich soviel hatte, das ich drei Abende davon essen konnte, gabs immer etwas anderes dazu, mein Favorit waren Kartoffeln ;-)

Obwohl der Chinakohl so ganz ohne Farbe ist hat er viele gute Inhaltsstoffe. Er ist vorallem voll mit Vitamin C (45 mg auf 100 g Salat). Außerdem stecken in ihm viele andere Nährstoffe, wie das Vitamin D und andere Mineralien wie Eisen, Magnesium und Calcium.

What on earth could you do with chinese cabbage – also known as Pak Choi, Japanese cabbage or Beijing cabbage – other than cooking it? Yeah, that’s what I thought about also. A while ago my mom made a salad out of it, ok that’s what I remember…but which dressing to make for it? Some days ago a colleague brought a kale salad to work with an amazing dressing, that’s what I recreated and it really complements the chinese cabbage.The sweet and tangy taste of the apple cider vinegar and the crispy salad really work together. Theoretically you could add fruites like mangos, apples or peaches but if you leave it plain it’s just fine.
As I made such a huge amount that it lasted me 3 nights, I had it three diferent ways. My favorite was with potatoes ;-)
You wouldn’t think chinese cabbage has a lot of healthy ingredients, because it has almost no color, but it’s super rich in Vitamin C (456 mg per 100 g/3.5 oz Salad). Other than that it has even more awesome nutrients, like Vitamine D and other minerals like iron, calium and magnesium.

Recipe (yields a large bowl)

What you’ll need

  • 1 small/medium sized chinese cabbage
  • 1 small red onion
  • 1/4 cup apple cidar vinegar
  • 1/2 tsp. black pepper
  • 1 Tbsp. dried cilantro (if you have use fresh one)
  • 1 Tbsp. dried Dill (if you have use fresh one)

What you wanna do

  1. Chop up the cabbage and place in a large serving bowl
  2. In your blender, blend all other ingredients very well
  3. Pour the dressing over the cabbage
  4. Let sit in fridge for at least an hour before serving

Tipp: Add some nuts/seeds on top like sunflower seeds, You could also add sun dreid tomatos for extra flavor

Taco Shells Gone Green with a Zucchini Paste

Darf ich vorstellen, mein absolutes lieblings Essen in letzter Zeit rohe, vegane Tacos. Die Zutaten variieren je nachdem was ich gerade zuhause habe. Anstelle der Salatblätter nehme ich auch Kohlblätter, wie zum Beispiel Kohlrabiblätter. Ja, denkt man nicht das man dieses Hasenfutter auch essen kann ;-) Manchmal habe ich auch keine Lust auf Guacomole, da gibt’s dann eben Humus. Aber was wirklich sein muss ist > Koriander! Das verändert wirklich alles.

Probierts doch auch mal!

Aber lasst uns mal über die wahnsinnig leckere Zucchinicreme sprechen, die ich letztens in einer Zeitschrift gesehen haben. In dem Magazin haben sie die Zucchini nur ganz leicht angebraten. Ich habe das Rezept etwas abgeändert, da ich unbedingt meinen geliebten gebackenen Knoblauch – zum Leidwesen meines Freundes, denn man stinkt danach ganz schön heftig – mit untermischen wollte, dachte ich mir ich könnte auch gleich die Zucchini mit backen.

May I introduce you to my absolute favorite dish lately? Raw vegan tacos. The ingredients vary all the time depending on what I have at home. Instead of the salad leafs I sometimes use kale leafs, like kohlrabi leafs – yes, i know you wouldn’t think of eating this rabbit food ;-) Sometimes I don’t feel like adding the guac, than I use hummus. But there’s one thing that’s a must and this is the cilantro. Such a game changer!

But let’s talk about this absolutely delicious zucchini paste I found in a magazin the other day. They made it with gently roasted zucchini, but since I wanted to add my beloved baked garlic – which my boyfriend doesn’t agree, because when you eat that you smell like hell  – I thought I might as well bake the zucchini also.

Recipe

What you’ll need

  • 2 medium sized zucchini
  • 1 whole garlic
  • 1 Tbsp. Coconut oil (you can also use olive-, ore sunflower seed oil)
  • Dried or fresh cilantro
  • A pinch of black pepper

What you wanna do
1. Wash the zucchini cut the ends off and slice in halve.
2. Wrap the garlic in a piece of tin foil (as seen in the pictures).
3. Place the zucchini halves and the wrapped garlic on a lined baking sheet and place in the oven on 180°C/356°F for 30-45 minutes.
4. Remove from the oven and place all the zucchini, oil and 3 cloves of the garlic – which you’ll only need to squeeze out of it’s skin – in the blender. Add some dried or fresh cilantro and the pepper on top and blend away ’till it reaches a creamy texture.
