Kannst du dich noch an die Apfelmuffins mit dem Erdnussbutterkern erinnern, die ich vor ein paar Wochen hier veröffentlicht habe? Tja, das Rezept geht natürlich auch mit einem Kern aus Schokolade ;) Wer hätte das gedacht?! Was jetzt besser ist – ob Schokolade oder Erdnussbutter – darüber lässt sich streiten (bin mir selber nicht sicher). Auf alle Fälle weiß ich, dass beide super lecker sind. Außerdem wie immer ohne weißen Zucker, Gluten oder tierische Produkte – dafür mit viiiiel Apfel ;p

Apfel Muffins mit Schokoladenkern (glutenfrei, ohne weißen Zucker, vegan)

6 Muffins

Was du benötigst

  • 3 Äpfel
  • 2 Tassen Haferflocken
  • 1 Teelöffel Backpulver
  • 1/2 Teelöffel Zimt
  • 1/4 Tasse Ahornsirup (oder: Honig, Agavendicksaft, Reissirup…)
  • 1/4 Tasse Kokosnuss- oder Sonnenblumenöl
  • 6 Teelöffel ungesüßte Schokotropfen

Was du tun musst

  1. In deiner Küchenmaschine mahle die Haferflocken zu Mehl, dann schütte das Mehl in eine Rührschüssel und hebe das Backpulver und den Zimt unter.
  2. Wasche und entkerne die Äpfel. Schneide sie in grobe Würfel (mit Schale) und püriere sie zusammen mit dem Ahornsirup und dem Öl bis ein feiner Brei entsteht. Am besten in deiner Küchenmaschine oder mit einem Stabmixer.
  3. Schütte den Brei über das Mehl und verrühre (mit einer Gabel oder Holzlöffel) alles bis es einen Teig ergibt.
  4. Fette deine Muffinform mit etwas Öl ein oder stecke Papier-Muffinfömrchen in die Form.
  5. Fülle die Muffinförmchen 3/4 mit dem Teig und mache mit einem Teelöffel jeweils ein kleines Loch in die Mitte, in das du nun je 1 Teelöffel Schokotropfen gibst. Jetzt kannst du auf jeden Muffin noch einen Esslöffel Teig geben. Da der Teig nicht stark aufgeht, brauchst du keine Angst haben, dass es überquillt.
  6. Backe deine Muffins bei 180°C/356°F für ca. 20-30 Minuten oder solange bis ein Zahnstocher, den du in die Mitte des Muffins steckst, sauber wieder heraus kommt.

Do you remember those apple muffins with a peanut butter center I posted some weeks ago? Well, the center also works with chocolate ;) Who would’ve thought?! It’s highly argubale which one – peanut butter or chocolate – is better (I’m not quite sure myself either). But I know for a fact, that both are pretty yummy. And as always without refined sugar, gluten or any animal products – but with loads of apple ;p

Apple Muffins with a Chocolate Center (gluten free, no white sugar, vegan)

6 Muffins

What you’ll need 

  • 3 apples
  • 2 cups rolled oats
  • 1 teaspoon backing powder
  • 1/2 teaspoon cinnamon
  • 1/4 cup maple syrup (or: honey, ricemalt syrup, agave nectar…)
  • 1/4 cup coconut or sunflower seed oil
  • 6 teaspoons unsweetened vegan chocolate chips

What you wann do

  1. Place the oats in your food procesor and blend them into fine flour. Than put the flour in a big bowl and mix well with the baking powder and cinnamon. 
  2. Wash and core the apples. Cut them into chunks (with the skins on) and blend them well with the sirup and oil in your food processor, until finely pureed.
  3. Pour the puree onto the flour mix and mix well (with fork or wooden spoon) until a dough forms. 
  4. Grease your muffin tin or place those little muffin paper sheets in each hole. 
  5. Fill the muffin forms 3/4 with the dough. Than – with a teaspoon – mould a little hole in each muffin dough. Fill the moulds with 1 teaspoon chocolate chips each. Than spoon another tablespoon dough onto each muffin. Don’t worry about overflowing, the dough doesn’t rise that much. 
  6. Bake the muffins at 180°C/356°F approx. 20-30 minutes or until an inserted toothpick comes out clean.

Apple Muffins made with Chickpea Flour

Ich hatte noch etwas Kichererbsenmehl von meinen Klößchen übrig, eigentlich wollte ich sie nocheinmal machen – sie waren einfach so gut – aber jetzt sind es Apfelmuffins geworden. Ziemlich einfach ohne viel Schnick-schnack.

I had some of the chickpea flour left over, from when I made the little “meat” balls. I planned on making them again – they’ve just been so good – but now apple muffins it is. Pretty fuss-free.

 

Recipe (yields 12 Muffins)

What youll need
1 3/4 cups chickpea flour (I made my own, by placing dry chickpeas in a food processor)
1/2 Tsp. baking powder
1/3 cups roughly chopped walnuts
1/2 cup of coconutoil
1/4 cup mapel syrup
1 Tsp. apple cider vinegar
2 shredded apples

What you wanna do
1. Mix dry ingredients first, than add all other ingredients and blend well using a fork.
2. Press mixture into lined muffin tin and place in oven for 30 minutes at 150 °C / 302° F
