Mein liebstes Mittag in letzter Zeit! Hummus mit roter Beete.
Da ich Montags und Freitags von zuhause aus arbeite, darf es zum Mittag gern etwas Schnelles sein. Schneller als Dosenfutter geht’s nicht ;)
Kichererbsen sind ein super Proteinlieferant und rote Beete haben wahnsinig viel Vitamin C und Mineralien in sich.
Wahrscheinlich kann man das, was ich hier mache, nicht mal Hummus nennen, weil man diesen meist mit Öl und Gewürzen verfeinert. Da ich es aber eher einfach mag, verwende ich gar nix weiter.
Ob in den Dosen und eingelegten Nahrungsmitteln noch die ganzen Nährstoffe stecken bleibt wohl zu diskutieren, zumindest ist es wohl ein gesundes Fast Food ;)

My fav lunch these days. Hummus with beetroot.
Since I’m working from home on Mondays and Fridays, I like a quick lunch. What’s quicker than canned food ;)
Chickpeas are very high in protein and beetroot contain loads of vitamin c and minerals.
You probably can’t even call my purée hummus, since hummus is made with oils and herbs. But as I like it simple, I add none of these.
If these canned foods still contain their vitamines and nutrients remains to be discussed, at least it’s a healthy fast food ;)
Recipie (yields one large serving)
What you need
- 1 can of chickpeas (about 2 cups)
- 1 glas of beetroot (about 1 cup)
What you wanna do
- Purée the chickpeas with the liquid it came with in the can
- Pour the purée in a bowl and top with the beetroot
