It’s the Season for Rhubarb again

Ich weiß nicht wie es dir geht, aber mir ist aufgefallen, dass es jetzt wieder überall in den Supermärkten Rhabarber gibt. Ich fand es bis letztes Jahr immer ziemlich schwierig ihn in der Küche einzusetzten – natürlich mal abgesehen vom Rhabarberkompott (na, wer kennt Kompott noch von früher ;D) oder -kuchen ;)

Auf jeden Fall habe ich letztes Jahr hier auf meinem Blog 3 leckere Rhabarberrezepte veröffentlicht. Ich werd sie dieses Jahr definitiv wieder machen, vorallem die Smoothies. Falls du auch Lust hast, hier geht’s zu den Rezepten:

I don’t know about you, but I see rhubarb everywhere in the supermarkets nowadays. Until last year, I wasn’t quite sure how to use it in the kitchen – well, of course except for canned rhubarb or rhubarb pie ;)

So anyways, I posted 3 really yummy rhubarb recipes last here on the blog. I’m definitely making them this year again. Maybe you’d enjoy these recipes as well, so here you go:

Rhubarb Cookies (Gluten free, Sugar free, vegan)

Rhabarber im Keks habe ich bisher auch noch nicht gehabt. Als ich aber den riesen Rhabarber bei meinen Eltern im Garten gesehen habe, hab ich sofort an Kekse gedacht. Vorallem wollte ich was Unkompliziertes und Schnelles. Den Rhabarber in einer Küchenmaschine zu mixen schien mir dann am logischsten ;-)
Et voilà, ziemlich lecker.
Aber ganz wichtig: NIMALS die Süße vergessen, sonst schmeckts wie saure Pappe… Glaubt mir, das ist mir schon so ergangen. Nicht wirklich schön.

Rhubarb in cookies, never had that before. But when I saw the huge stalks in my parents backyard, I immediately thought of cookies. Most of all I wanted something uncomplicated and fast. Liquifing the rhubarb in the blender seemed the most reasonable to me ;-)
Et voilà, pretty tastey.
But keep in mind: NEVER forget to sweeten them or else you’ll end up with sour cardboard. Trust me I’ve been there. Not very pretty.

Recipe (makes about 12 cookies)

What you’ll need
1 small stalk rhubarb
1 1/2 cup gluten free oats
1/4 cup mapel syrup
1/4 cup sunflower seed oil
1 tsp cinnamon
1/4 tsp baking powder

What you wanna do
Wash and peel the rhubarb stalk, then cut in chunks
Place those chunks of rhubarb, the oil and the syrup in a blender until it’s liquified
Mix the liquid with the oats, cinnamon and baking powder
Spoon the mixture onto a lined cookie sheet and bake for 20 minutes on 180°C/356°F
Let the cool and set before you serve ’em

Tip: Spread some marmelade on top ;-)
