Die Tarte ist inspiriert von dem Blogpost über reichhaltige, vegane Kuchen. The Minimalist Baker hatten ein Kuchenrezept gepostet, für das nur eine Schüssel gebraucht wird. Das musste ich natürlich ausprobieren. Denn auf ein Schlachtfeld in der Küche hatte ich nun wirklich keine Lust letzten Sonntag, dafür aber auf einen schön schokoladigen, saftigen Kuchen. Hinterher musste ich nur meine Küchenmachine und Backformen auswaschen und der Kuchen war genauso wie ich es mir ihn vorgestellt hatte. Ich würde mal sagen, Challenge bestanden.

The inspiration for this tarte came from the blogpost I made about really rich vegan cakes. The Minimalist Baker posted a one bowl chocolate cake recipe. I mean I HAD to try this. I was craving a chocolaty, fudgy cake last Sunday, but wasn’t so happy about the thought that I have to clean up the mess I would make. Afterwards I only had three dishes to clean – my blender and my two baking pans. And the tarte came out exactly as I hoped. I’d say challenge successfully accomplished.

Recipe (makes two tartes, or one cake)

What you’ll need

3 ripe Bananas
2 cups gluten free oat flour (just place the oats in a blender and blend until it’s finely grated)
1 can or 2 cups of coconut milk
5 Tbsp. Maple Syrup
2 tsp. Baking powder
5 Tbsp. Cacao
5 Tbsp. Caco nibs or chocolate chips
1 cup walnuts

What you wanna do

  1. Place all ingredients except for the chocolate chips and walnuts into a blender and blend until the batter is free of any clumps
  2. Place the batter into two cake pans and sprinkle with nuts and chocolate chips
  3. Bake in the oven on 180°C / 356°F for apporx. 30 minutes or toothpick comes out clean, when inserted
  4. Let cool and enjoy

Jetzt einen dieser Kuchen genießen…oh man…das wäre wunderbar. Aber mal ehrlich, wer -wenn er bei klarem Verstand ist- würde nicht das erste Rezept probieren. “Eine-Rührschüssel-Kuchen” weniger Abwasch! Hallo! Win-win Situation genau hier.

Indulging in one of these cakes…oh my…that would be amazing right now. But seriously the first one. I mean, who -in their right mind- wouldn’t want to try that recipe. One bowl makes less dishes to wash. Duh! Win-win situtation right there.

Bananen-Brot, eines meiner liebsten Frühstücke. Wenn es frisch getoastet ist und die Schokoladencreme ganz flüssig wird, die man oben drauf streicht….hmm..lecker. Diesmal aber ist es das erste Mal, das ich eine gesündere Variante gebacken habe. Nämlich ohne Kristallzucker und ohne Weizenmehl, dafür mit dem proteinreichen und glutenfreien Buchweizen und dem gesünderen Ahornsirup.

Banana Bread, one of my favorit breakfasts. The moment when the toasted slice of bread liquifies the chocolate spread…mmmhhh…delicious. This time around – for the first time – I tried to make it more healthy. Instead of the sugar I used mapel syrup and instead of whole wheat flour, I used the gluten free and high in protein version buckwheat.

Recipe (yields one medium loaf)
What you’ll need
2 cups buckwheat flour
1/2 tsp. Baking powder
5 really ripe Bananas
2 flax eggs (2 tsp. flaxseeds + 3 Tbsp. water)
1/2 cup milk of your choice (I used soy-rice-milk)
1/2 cup coconut oil
1/4 cip mapel syrup
1 Tbsp. vinegar
1/2 Tbsp. cinnamon

What you wanna do
1. Prepare the flax egg by adding both water to the flax seeds and let thicken for 5-10 minutes
2. First mix the dry ingredients than smush the bananas and mix all wet ingredients
3. Mix dry and wet ingredients and place in baking tin
4. Bake on 150°C / 300°F for 30 minutes or until toothpick comes out clean
