Pickled Radish

Ich mag Radieschen nicht besonders, aber in Knoblauch und Zwiebeln eingelegt sind sie super. Ich hatte vor kurzem eine große Tüte voll mit Radieschen vom meiner Mama bekommen und sie gleich eingelegt. Super lecker. Ich habe den Zucker mit einer gesünderen Alternative substituiert und dafür Ahornsirup verwendet. Den Unterschied schmeckt man nicht wirklich. Guter Tausch!

I don’t really like radish but I do eat them pickled with onion and garlic. A couple of weeks ago I got a big batch of radishes from my mom and pickled them immediately. Super tastey. I substituted the sugar for a more healthy alternative. Maple syrup that is and you can’t really taste the difference. Pretty good exchange!

Recipe (yields about 3 x 250ml/8 oz jars)

What you’ll need?

  • About 500 g / 1 lb radish
  • 2 small red onions
  • 4 gloves of garlic
  • 1/4 cup mapel syrup
  • About 1 litre of water

What you wanna do?
1. Wash the radishes and cut up the stems then slice very thinly with a sharp knive or a mandolin slicer.
2. Peel the onions and the garlic. And slice both thinly.
3. In a sauce pan add the water, the mapel syrup and the garlic and bring to a boil then turn down the heat and let simmer for about 20 minutes.
4. In the glass jars place the radishes and onion alternating one layer radish and one layer onion at a time. Note to layer until you reach 1cm/0.4 in underneath the top of the jar.
5. Whith a small ladle scoop the water-maple syrup-garlic mixture into the filled jars until the liquid is on top of the last layer.
6. Seal imediately with the lid and let cool down before placing it into the fridge. There you can keep it closed for up to several weeks.

Meine Oma hat früher ganz viele Eintöpfe gekocht und an einen kann ich mich besonders erinnern, Linseneintopf. Ich habe ihn geliebt. Er war immer so schön süß sauer, durch den Essig und den Zucker. Jetzt wollte ich ihn endlich auch mal selbst ausprobieren. Da man hierfür die Linsen über Nacht einweicht, um Blähungen zu vermeiden, war ich bisher einfach zu faul. Aber es hat sich gelohnt. Ich habe nach keinem Rezept gekocht, sondern einfach worauf ich Lust hatte. Da durften meine geliebtenb Kartoffeln natürlich nicht fehlen. Außerdem hatte ich irgendwo mal gesehen, das man auch Äpfel mit in den Eintopf machen kann. Gesagt bzw. gesehen, getan!

My granny used to make all these amazing soups back when I was little. One that stood out to me the most, was her lentli soup. Such a beautiful sweet and sour flavor, because of the vinegar and sugar. I finally got around to making my own. As you have to soak the lentils over night, to avoid bloating, I’ve always been to lazy to try. But it was now well worth it. I didn’t follow any recipe, just used what I wanted. So I couldn’t not include my beloved potatos. Other than that, I once saw a recipe where they also added apples. No sooner said or better  seen, than done!

Recipe (yields a large pot)

What you’ll need

  • 2 cups brown lentils
  • 4 large potatoes
  • 4 carrots
  • 1 onion
  • 2 medium sized, crispy and sweet apples
  • 1 Tbsp. Coconut oil
  • 1 litre of water
  • 3-4 Tbsp. Apple cider vinager
  • Sweetener of your choice – I used stevia
  • 1 Tsp. Powdered coriander
  • 1/2 Tsp. Black pepper
  • 1/2 Tsp. Chilly flakes

What you wanna do

  1. Soak the lentils, covered in water, over night – This is muy importante, as unsoaked lentils would cause bad bloating
  2. Chop up the potatos, carrots, apples and the onion into little squares
  3. In  a large pot melt the coconut oil and fry your onions until glazed
  4. Add the lentils, chopped carrots, potatos and apples to the pot, as well as the herbs, spices, the vinegar and the sweetener according to your liking and cover in water
  5. Let that simmer on low heat for at least an hour
